I think it must have to do with SMTP pipelining. Seems the 1&1 mail server needs something ost doesn't give. Smtp.gmail.com Ip Address I believe I've set everything up correctly (I've gone through the process many times now!), however I'm struggling to get the emails to send. Any idea what could have caused this?

Try checking all your files and directories permission. The godaddy representative said go to my MX (Mail Exchanger) and set relay.jangostmp.net.
